Blue Oyster is the workhorse of the gourmet mushroom world, and the one most likely to outperform your expectations the first time you grow it.
Pleurotus ostreatus var. columbinus is cool-weather adapted, forgiving across a wide temperature range, and consistent. The colder the temps, the bluer the caps. The slate-blue caps emerge in clusters, fanning out in overlapping tiers that make the box look like a still life. By day 10 to 14, you're harvesting.
The flavor is mild and savory with a slight woodsy depth that plays well with everything: pasta, risotto, eggs, grain bowls, soups. The texture is silky when cooked low and slow, or slightly firm when hit with high heat. It's the mushroom that converts people who think they don't like mushrooms.
Blue Oyster is also one of the most nutritionally dense varieties we grow. It's a significant source of ergothioneine, a naturally occurring antioxidant that the human body can't synthesize - sometimes called the "longevity antioxidant" in nutrition research.
