Pink Oyster is the fastest fruiting variety we grow and the most visually dramatic. Within 7 to 10 days of cutting the bag, vivid hot-pink clusters push through and fan out into layered, petal-like caps. Pleurotus djamor is tropical — it likes warmth, rewards humidity, and moves fast. Sautéed, the caps crisp at the edges and develop a savory, slightly sweet depth that's more nuanced than the 'bacon' shorthand you've read everywhere else.

How you grow it.

Five steps. No equipment.

  1. 01Do not refrigerate the bag. Store at room temperature until you're ready to start.
  2. 02Cut a small X in the marked spot on the bag.
  3. 03Mist twice a day. Pink Oyster loves humidity — a quick spray near the cut works.
  4. 04First pins show in 4–6 days, harvest in 7–10. Twist and pull at the base.
  5. 05Second flush follows in 2–4 weeks. After that, break the block into your garden for a third round outdoors.

Pink Oysters have a 48-hour shelf life in the fridge, which is exactly the case for growing your own. Store in paper, cook within two days, and you'll never go back to grocery store oysters. Outside, in warm weather, the colonized block can keep producing — it's tropical, so wait for the heat.

    Sort of. Sautéed in oil until the edges crisp, it gets a savory, slightly smoky character. We don't lean on the bacon comparison because the flavor is its own thing — and better.
